4 lbs. gardein Beefless Tips (#00043) or gardein Chick’n Cubes ¾” (#00011)¼ cup vegetable oil5 onions, chopped1 jalapeño, deveined, seeded and minced4 garlic cloves, minced6 tbsp chili powder3 tsp ground cumin2 bay leaves½ cup tomato paste2 cups canned chickpeas, drained and rinsed2 cups canned kidney beans, drained and rinsed2 cups frozen corn2 tbsp chipotle in adobo, pureed2 qts. diced tomatoes, canned1 qt. vegetable stockSalt and black pepper to taste½ cup chopped cilantro12 lime wedgesSour cream or vegan option
In a large pot, sauté onions, jalapeño pepper and garlic in oil until onions are translucent.
Add chili powder, ground cumin, bay leaf and tomato paste. Cook for 5 minutes.
Add chickpeas, kidney beans, frozen corn, diced tomatoes, and chipotle pepper.
Add vegetable stock to cover vegetables and cook for 1/2 hour stirring often.
In sauté pan, in batches, caramelize gardein beefless tips on all sides until golden brown and add to chili. Adjust seasoning.
Garnish chili with chopped cilantro, sour cream and lime wedge.
